Best Vegan Appetizer for Weekend: Çiğ Köfte

Ingredients:

2 slices onion, 20 g
1 clove of garlic
1 teaspoon tomato paste, you can use passata as well
1 heaped teaspoon sweet pepper paste,
½ cup fine bulgur, use brown bulgur if you can find
¼ tomato, 40 g
1 good handful of peanuts
1 levelled teaspoon isot pepper (or any kind of spicy pepper)
1-2 ice cubes
1 heaped tablespoon ketchup
1 levelled teaspoon sumac
1 pinch cumin
1 pinch black pepper
½ teaspoon red pepper powder, use more if don’t have pepper paste
1 teaspoon pomegranate molasses
2 tablespoons olive oil
1 tablespoon lemon juice
10 sprigs parsley

TACO ÇİĞ KÖFTE

Ingredients:
Çiğ köfte

1 medium onion, finely chopped
1 pinch sumac
2 teaspoons of olive oil
4 slices cheddar cheese, small slices
Quarter iceberg lettuce (120 g), sliced
12 sprigs of parsley, chopped
The rest of the tomato that you used for çiğ köfte
2-3 gherkins, sliced
1 small pack of Doritos nacho, crushed, or any chips that you like
4 mini tortilla breads

Directions:

• Soak the bulgur with 4-5 tablespoons of hot water to make it swell.
• While the bulgur is swelling, blend the onion, tomato, garlic, sweet pepper paste, and tomato paste in a food processor with 2 small ice cubes.
• Add the pomegranate molasses, olive oil, salt, black pepper, ketchup, red pepper powder, cumin, sumac, isot and lemon juice to the food processor and mix all the ingredients thoroughly. Add in the soaked bulgur and peanuts and parsley and pulse until all blended. You can add another ice cubes depending on the bulgur. Stop the food processor from time to time and push the mixture down to prevent any big pieces from remaining inside.
• Traditionally we serve the çiğ köfte with some lettuce leaves, turnip, parsley, lemons, and more pomegranate molasses. But in this video, we try something different from classic!
• To make the çiğ köfte taco while the çiğ köfte mixture rests for a while, you can prepare the taco ingredients. Mix the onion and parsley with a pinch of salt, some olive oil, and a pinch of sumac. You can soften the lettuce with a pinch of salt.
• Put 1 heaping tablespoon of çiğ köfte mixture into the tortilla breads and spread. You can put half a handful of crushed Doritos, lettuce, tomatoes, 1-2 sprigs of parsley, pickles, sumac onions, cheese and finally more Doritos on top and serve.
